Guests can go gluten-free at Scandic next year

Scandic is introducing additions to its breakfast buffet to appeal to vegans and people with food allergies. The new options, which were tested at three hotels and will be rolled out in Sweden at the beginning of 2016, will include 28 gluten- and lactose-free options.

The Stockholm-based hotel company, which markets itself as the Nordic region’s most sustainable hotel operator, has always focused on environmental sustainability and social responsibility. It has been broadening that focus to include accessibility to its guests.

That’s based on customer feedback, says Thomas Fankl, food and beverage director at Scandic Sweden. “Many people avoid lactose and gluten even though they do not have allergies. Whatever the reason, we want our guests to enjoy a good breakfast,” he said.

Breakfast buffet options will include lactose-free products like yogurt and butter; oat-based beverages; gluten-free breads, crackers, muesli and toppings; and vegan cheese substitutes and sandwich spreads. The foods are from Scandic supplier brands including Arla, Carlshamn and Oatly. The buffets will have new equipment, too, including a separate fridge for dairy products and a separate toaster.

Tailoring breakfast offerings is an important component of the company’s commitment to accessibility that goes beyond physical impairments, says Magnus Berglund, Scandic’s director of accessibility.
