Renowned Indian restaurant pops up at London hotel

Bukhara, the acclaimed Indian restaurant at ITC Maurya in New Delhi, has popped up at the Sheraton Park Tower, Knightsbridge, through June 1. The two properties are both part of Starwood Hotels & Resorts Worldwide’s Luxury Collection.

The pop-up Bukhara is situated under a linen canopied tent with a garden of palm trees. Fuchsia and turquoise pops of color are accompanied by candlelit wooden tables displaying an eclectic collection of wooden and stone antiques. The outside garden is adorned with antique pillars and statues, and rustic metal lamps over the bar illuminate the rich draped fabrics, plush cushions and lounge seating throughout the outdoor space.

“I wanted to celebrate the beauty of nature in India, a country of vast and varied landscapes that has the ability to transport people to the magical garden that my heart sees,” said Creative Director Waris Ahluwalia, who styled the space.

ITC Hotels Corporate Chef Manjit Gill is cooking up signature Bukhara dishes such as Sikandari Raan — marinated whole leg of spring lamb — and Dal Bukhara, a combination of whole black lentils, ginger and garlic slow-cooked over coals for 18 hours.

“For 34 years, my passion has been bringing to life the unique tastes of the North West Frontier and the techniques of tandoor cuisine, inspired by the camaraderie of the campfire,” Gill said. “This pop-up is an amazing opportunity to transport the tastes of Bukhara from New Delhi to London, taking a new generation of diners on an epicurean adventure that, we hope, will inspire guests to visit or revisit India soon.”
