What’s Hot: Broadmoor unveils new dining, late night spot

The Broadmoor has introduced Play, a new dining and late night spot. The resort, located in Colorado Springs, Colorado, has also reopened its signature English pub, The Golden Bee.

Play is designed with a “luxury retro” feel, offering an international menu and family-friendly activities like bowling, table shuffleboard, and televisions with gaming systems.

Executive Chef Bertrand Bouquin and Executive Sous Chef of Restaurants David Patterson draw inspiration from their travels for the menu, which includes both snacks and meals like a roasted jalapeño corndog; a signature burger with beef, braised short ribs, caramelized onion, bacon and cheddar; and a flatbread with egglant, zucchini, tomato, olives and basil. Sweet options include soda fountain-inspired milkshakes and sundaes.

The bar serves local Colorado beers as well as wine, cocktails, spiked milkshakes, ice cream floats, and shaved ice.

Meanwhile, after five months of renovation, the Golden Bee has doubled in size to offer seating for 130 guests. Although the restaurant has a new façade and covered rooftop terrace, it still has an atmosphere inspired by a 19th-century London pub.

The Golden Bee’s beverage program has grown to include more than 25 European and Colorado beers. The gin and tonic bar has eight gins to mix with “accent flavors” like ginger honey, hibiscus and jalapeño.

The menu has also expanded with new dishes like Scotch eggs with whole-grain mustard; pork rillettes with house piccalilli; scrumpets with mint vinegar; and sautéed calf liver with crushed potatoes, whole-grain mustard and cornichon jus.
