Hot Openings: Paying homage to a Miami icon

Built in 1958 as The Carillon Hotel by the “Father of Miami Modern Architecture” Norman Giller, the Carillon Miami Beach has aimed to revive the iconic address through an extensive rebrand project. As the first resort under the new Carillion brand, the property strives to incorporate intuitive guest service with top-notch culinary, spa, fitness, wellness and hospitality experiences.

Kicking off the rebranding is the launch of Carillon’s restaurant, Thyme, developed by Executive Chef Fritz Zwahlen ­serving Asian-influenced, progressive American cuisine with fresh, seasonal ingredients. Oceanfront views from the indoor/outdoor venue are meant to complement the menu offerings, which feature dishes such as short-rib foie gras dumplings and miso black cod.

The Spa at Carillon encompasses integrated medical, wellness and fitness programs. As an extension of the spa program, Carillon’s medical staff offers progressive daily lectures. Additionally, the property’s fitness center offers the country’s largest collection of Artis cardiovascular equipment by Technogym.

Additional renovation projects, including the hotel’s lobby and pool area, are set to be complete in early winter 2016. The hotel was acquired by Z Capital Partners this past January and appointed Lester Scott managing director.
