Small, fuzzy guests reap sweet rewards for one hotel chef

The middle of Chicago’s Loop might seem like a strange place to welcome bees, but they’ve made themselves comfortable atop the Palmer House Hilton. Senior Sous Chef Valeria Benner tends her flock 25 stories above the city’s fray. She maintains that urban honey is delicious, and guests at the hotel’s Lockwood restaurant can test that assertion for themselves.
