Samuelsson to open pop-up restaurant at Fairmont in Bermuda

Chef Marcus Samuelsson — the Ethiopian-born, Swedish-raised chef/owner of Red Rooster Harlem in New York City whose accolades include multiple James Beard Foundation Awards and victories on television shows such as “Top Chef Masters” and “Chopped: All Stars” — plans to open a pop-up restaurant from June 3 to August 3 at the Fairmont Hamilton Princess in Bermuda.

Samuelsson at HP will preview the chef’s new signature restaurant that is scheduled to open at the hotel in May 2015. The pop-up will feature a 42-seat indoor dining room in addition to outdoor seating for up to 60. Handcrafted design elements will showcase geometric patterned pillows and flooring, nautical elements, Scandinavian-inspired wood furniture and pops of color.

The menu will highlight fresh seafood and local flavors via raw options like rockfish crudo with pickled cherry tomato, radishes and jalapeño oil; small plates like fish chowder croquettes with rum aioli; and large plates like grilled head-on shrimp with ginger-scallion sauce, sweet soy and cilantro.

“I’m excited to create new flavors inspired by the rich, vibrant culture and history of Bermuda,” Samuelsson said. “From fresh-caught, local fish to an array of Caribbean and Portuguese ingredients and traditions, there is such a wealth of inspiration to bring to the table.”
