How one restaurant changed the culinary world

Sometimes — perhaps a lot of times — big things start quite small. Such was the case with Blackbird, today a legendary Chicago restaurant whose chefs and cuisine have impacted the global culinary landscape, but a place nonetheless with extremely humble beginnings that relied on hard work, perseverance and not a small amount of luck to survive.

HOTELS’ sister publication, Plate, recently released a multimedia oral history of Blackbird that is well worth reading and watching. There is a ton that can be taken away from this many-faceted piece, but one of my strongest takeaways was that in F&B and many areas of life, what is simple often is what is best as long as it presented with passion and enjoyed with a full heart.
