Renovations on the 152-year-old Hotel de la Paix started in May 2016 (the hotel never closed during this time) and included a multimillion-dollar makeover of the public spaces, all guest rooms as well as the food and beverage outlets.

The project is the result of a partnership between Il Prisma, an Italian design company and architect and designer Barbara Casati. London-based B3 Designers was behind the hotel’s Fiskebar restaurants and bar with contemporary Nordic minimalism as the starting point for the design.

The Grace Kelly Suite, named after the Princess of Monaco who was a regular guest at the hotel, is now the hotel’s Presidential Suite, with a newly art deco design and gold leaf gilding. The new hotel will also have a meeting space component: accommodating up to 100 guests.

The hotel has two new culinary experiences: Fiskebar, from Executive Chef Alessio Corda, has a Nordic-fusion concept. Spread across four interconnecting spaces, including a fresh fish counter with communal seating, the restaurant’s styling is reminiscent of a traditional Scandinavian fish market, where minimalist interiors are set off by natural materials such as wood and leather to create a Nordic ambience.

Living Room Bar & Kitchen has all-day dining, serving regional dishes and global flavors with a thoughtfully crafted menu that showcases fresh, local and seasonal produce. Lounge-style setting is embellished with elements of the building’s historic details and original features, such as the 150-year old parquet and walnut floor. Additionally, the hotel has a chocolate shop from Swiss chocolatier Philippe Pascoët.
