The Four Seasons Resort Punta Mita recently sunk millions into a full-scale renovation oriented around wellness and fitness programming, including dietary and exercise recommendations based on genetic testing and anti-gravity yoga facilities.
Now, add to that list menus pumped full of vegan options.
The 5-star Mexican hotel has partnered with vegan chef Leslie Durso to create 25 new plant-based dishes including appetizers, soups, salads, entrees and desserts.
The locally inspired vegan dishes created by Durso are available at the resort’s three restaurants, Aramara, Bahia by Richard Sandoval and Ketsi, and through in-room dining.
Aramara: Asian influences blended with a taste of Mexico. New vegan dishes include green coconut milk curry, stir fried quinoa with crispy tofu and sundried tomato sushi rolls.
Bahia by Richard Sandoval: Contemporary seafood-centric grill. Vegan dishes include confit cherry tomato with zucchini satay and eggplant cannelloni.
Ketsi: Casual all-day dining. New plant-based additions like crispy tofu tacos and portobello asado fajitas.
As a chef and healthy living educator, Durso’s cuisine reflects a plant-based movement oriented around sustainability. She has worked as a private chef for New York socialites, catered to the Hollywood elite and appeared on national television networks including Food Network and CBS, in addition to cooking in kitchens in Thailand, Peru, and Italy.
